  • 2 cups All-purpose Flour
  • 1 teaspoon Baking Soda
  • 1/4 teaspoon Salt
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Ground Ginger (added for Jamaican flair)
  • 1/4 teaspoon Ground Cloves (added for depth)
  • 1/4 teaspoon Nutmeg
  • 1/2 cup Unsalted Butter
  • 1 cup Brown Sugar
  • 2 Eggs, room temperature
  • 1 teaspoon Vanilla Extract
  • 1/2 teaspoon Rum Extract (optional, for a Jamaican twist)
  • 1/2 cup chopped Walnuts
  • 3/4 cup Dark Chocolate Chips
  • 1/2 cup shredded Coconut (added for texture and tropical flavor)

Preparation Steps:

  1. Preheat Oven: Set your oven to 350°F (175°C).

  2. Mashing Bananas: In a large bowl, mash the bananas. Their natural sweetness is key for the bread's flavor.

  3. Melting Butter: Melt butter over low heat in a saucepan, enhancing its flavor.

  4. Combine Banana and Butter: Mix the melted butter with the mashed bananas.

  5. Sugar and Vanilla: Stir in brown sugar and vanilla extract, adding the optional rum extract for a Jamaican twist.

  6. Dry Ingredients: Sift together flour, baking soda, salt, cinnamon, ginger, cloves, and nutmeg.

  7. Combine Wet and Dry: Gently mix the dry ingredients into the banana mixture, avoiding overmixing.

  8. Eggs: Add eggs one at a time, incorporating each fully.

  9. Walnuts, Chocolate Chips, and Coconut: Fold in walnuts, chocolate chips, and shredded coconut.

  10. Baking: Pour batter into a greased loaf pan. Bake for 50-60 minutes until golden brown.

  11. Cooling: Cool in the pan for 10-15 minutes, then on a wire rack.

Enjoy this Jamaican-inspired banana bread, perfect with a cup of tea or as a special treat. The addition of ginger, cloves, rum extract, and coconut enhances the traditional recipe with Caribbean flavours, making each slice a delightful journey to the tropics.
