This gluten-free version stays separate from the main loaf for one reason: inclusion is not an afterthought. If someone you love avoids gluten, making a version for them is a practical way of saying, “there is a place for you at this table.”

Ingredients

  • 3 large overripe bananas
  • 1 3/4 cups gluten-free flour blend suitable for baking
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup unsalted butter, melted and cooled
  • 1 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 cup toasted walnuts, optional
  • 3/4 cup dark chocolate chips, optional

Method

  1. Heat oven to 350°F / 175°C and grease a loaf pan.
  2. Whisk flour blend, baking soda, salt, cinnamon and nutmeg.
  3. In another bowl combine mashed bananas, cooled butter, brown sugar, eggs and vanilla.
  4. Fold dry ingredients gently into wet ingredients.
  5. Fold in optional walnuts and chocolate chips.
  6. Bake about 55–60 minutes, checking the centre for doneness.
  7. Cool before slicing.

Serve the person, not the label. If you are baking for someone with a medical dietary restriction, ask what ingredients and preparation practices they need rather than assuming every “gluten-free” kitchen setup is appropriate.
